egg muffins

 

IMG_20170417_150419 (1)_optFancy your eggs a little different? Try out these egg muffins!

Ingredients:

6 eggs,

2 tablespoons of crème fraîche

some herbal salt

broccoli, a few chopped up chuncks

1/4 medium sized onion finally chopped

4 -5 tablespoons of grated cheese, like padano cheese or cheddar cheese or a mix of both

2 tablespoons of tapioca flower or corn flower

olive oil or butter

Preparation:

Put some olive oil or butter in a frying pan and add the chopped onion and when the onion is glazed add the broccoli stir and cook for approximately 5 mins.

Prepare the muffin tins by greasing them with some butter or olive oil.

IMG_20170417_142257_optMix the 6 eggs with the crème fraîche and add the flower and the cheese

Mix in the broccoli and onion mix

IMG_20170417_142530_optBake in a preheated 180 degree oven for approximately 15 minutes or until golden brown.

Serve warm or at room temperature.
