Tai inspired rice
Ingredients for 4 people:
Basmati rice about 1.5 cup
Fresh white fish, for example rosada, 2 medium sized to large fillets
2 medium sized leeks
1 small onion
One tin of coconut milk
2 tablespoons of coconut oil
A good squeeze of Tai fish sauce
1 teaspoon of green Tai curry paste (if you like spicy you can put some more). Some brands are a lot spicier than others so it is good to not put too much if you don’t like it too spicy.
Cook the rice according to instructions.
Peel and chop the onion
Clean and chop the leaks into rings
Chop the fresh fish into small chunks and set aside
Heat two tablespoons of coconut oil in a large frying pan or paella pan.
Glace the chopped onion. In the oil, add the Tai green paste stir well and then add the leeks and a good squeeze of Tai fish sauce. This is rather salty and acts as the main salt for the dish. Squeeze in some lemon juice at this stage.
Put a lid on the pan, stirring every now and then, make sure it doesn’t burn. When the leeks are getting soft you add the entire tin of coconut milk. Bring to boil and leave to simmer for a couple of minutes. Check if the leeks are cooked.
When the leeks are ready to add the pieces of fish and sprinkle with a little bit of salt and with fresh dill. Put the lid on and keep checking till the fish is cooked.
Serve with the basmati rice.
