Homemade gazpacho

About 1.5 kg of tomatoes

1 large or two small cucumbers

2 fairly large or three small Spanish green peppers

½ a small onion

2 small or medium size clove of garlic (if you like garlic put 2 if not just 1)

About 4 tablespoons of extra virgin olive oil

About 3 to 4 tablespoons of apple cider vinegar

Salt to taste, but at least 1 teaspoon



Take the skin of the tomatoes (you can do this by covering them with boiling water just for a few seconds, then rinse them with cold water. Some tomatoes let go of the skin better than others)

Peel and cut the onion and the cucumber into pieces

Wash and cut the green peppers

Put the above ingredients plus de garlic in a blender. You might have to do it in batches.

When all the ingredients have been blended you can add more salt or vinegar to taste.

Put in the fridge to cool

Serve cold and yes, it is delicious!
